Spreadit Plum • Chili • Vodka Crumble Cake
Ingredients
- 90 + 10 gm regular flour
- 30 gm powder jaggery
- 20 gm Butter cubed
- 1 Egg
Cake Batter
- 200 gm Butter
- 150 gm powder jaggery
- 2 Egg
- 200 gm almond Flour
- 5 gm Baking Powder
- 50 ml Milk
- 3 ml Vanilla Essence
- 190 gm Spreadit Plum Chili Vodka Jam
Method
- In a clean bowl mix the flour, jaggery and butter.
- Using your cutter or your hands bring the dough together till it reaches sandy consistency and can hold its own shape when pressed down**
- Add the beaten egg to the mix** and bring it together**. If the dough is too sticky add the reserved flour. **
- Leave it to rest**
- In another clean bowl** we add the butter and jaggery and whip it till its smooth and fluffy. **
- Add the egg one by one** and whisk together.
- Add** the vanilla essence.
- Divide the flour into three parts and add the first part to the mix followed by the milk. Keep repeating** till they are both over and everything is mixed in**
- Line a 9 inch baking tray with parchment paper
- Add the cake batter, flatten it out
- Add the plum jam on top of that and spread it all over the batter in swirly patterns
- Break the crumb on top and bake at 275ºC for 35 mins or until done**
- Dust with sugar and serve sliced up
